  • ¾ of cornstarch
  • 1 teaspoon of salt to taste
  • 2 slightly large beaten eggs
  • Softened margarine. Butter can be used as a substitute
  • 1 cup of sugar to taste
  • ¾ cup of milk

Important Notice:

The ingredients should be enough according to the number of people being served. Using the right pan for the right job is appropriate. While there are so many types of pans like lasagna pans as well as crepe pans among others, in this case, a saucepan is the ideal one.

Procedure:

Step 1: In a saucepan, mix the salt, cornstarch, and sugar. Add the milk and stir gradually. An ideal pan is a 2-quart pan. Set the mixture to cook over medium heat as you stir continuously. Cook until the mixture boils and forms a thick consistency.

Step 2: Separate about a half of the hot mixture and add the slightly beaten eggs.

Step 3: Add that mixture back into the saucepan, boil it and stir for about a minute.

Step 4: Remove the mixture carefully from the heat and stir in vanilla and butter. At this point your pudding is ready.

Step 5: Cover it well and refrigerate until it is chilled. This is likely to take a whole hour.

If you don’t intend to use it right away, cover it and place it in a refrigerator.


Recipe 2: Gluten Free Rice Pudding

Ingredients:

  • 1 cup of short grain rice
  • 1stick of whole cinnamon
  • Ground cinnamon
  • Pure vanilla extract
  • ½ cup of sugar
  • 1piece of whole nutmeg
  • 4 cups of milk
  • 2 cups of water
  • 1/8 tablespoonful of kosher salt
  • 1 tablespoonful of unsalted butter

* Serves approximately six people.

Procedure:

Step 1: Add some water to a large saucepan. To the water add the rice, butter, and salt. Stir them continuously as they cook over medium heat until they boil.

Step 2: Once they boil, reduce the heat to a mere simmer and let it cook for up to 15 minutes. By this time, the rice will have absorbed most of the water leaving only little white and thick water. Be careful with the time to prevent the rice from overcooking.

Step 3: Separately in another saucepan of medium size, mix the milk, cinnamon, sugar, and nutmeg and set the resulting mixture to cook over medium heat for about two minutes until the mixture simmers.

Step 4: With the two mixtures in both the large and the medium-sized saucepans ready, add the simmering milk mixture by passing it through a strainer for purification purposes and throw away the nutmeg and cinnamon.

Step 5: Set the milk and rice mixture to cook over medium-low heat. Let it cook for up to 15 minutes until the rice absorbs most of the milk moisture.

Step 6: Set it to cool, and the rice pudding will thicken with time as it cools.

Step 7: Add the vanilla and stir the mixture for them to combine perfectly.

Step 8: Divide it by the number of servings it was supposed to yield, sprinkle with the ground cinnamon to your liking, cover and refrigerate for about an hour.
